Slow cooker sticky date pudding


This low‑and‑slow dessert is the perfect dessert for those chilly winter evenings.

Ingredients


Serves: 6
Prep time: 30 minutes
Cooking time: 4 hours

Pudding 

• 250g pitted dates, chopped 

• 1 teaspoon baking soda 

• 300ml boiling water 

• 100g unsalted butter, softened 

• 1 teaspoon vanilla essence 

• 200g brown sugar 

• 2 eggs at room temperature 

• 375g self-raising flour 

Syrup 

• 150g brown sugar 

• 80g golden syrup 

• 750ml boiling water

Method


  1. In a bowl, combine the dates with the baking soda and 300ml boiling water. 
  2. In another bowl, beat the butter, sugar, vanilla, and baking soda until light and fluffy. Beat in the eggs one by one until well combined. 
  3. Add the flour and dates (including the water) and mix until well combined. 
  4. Pour the mix into a lightly greased slow cooker and top the pudding mix with brown sugar and golden syrup. 
  5. Slowly pour in the 750ml boiling water. 
  6. Cook on low for 4 hours. 
  7. Serve with custard or vanilla ice cream.
